I'm not sure if I"m misunderstanding the "critical" stat on weapons, but it seems that the Estoc (I don't have one yet to test) has only 100 critical, and should therefore do less damage than the Uchigatana which also has 100 critical, but even higher base damage YoukaiSlayer 7 years ago #6.

Some weapons can counter backstab fishing well, like black knight greataxe 1h r1s, because their hitboxes surround you. This does not work if the opponent can poise through it. Another counter is to work out which way around you they're circling, and move backwards/sideways in that direction to get behind them for your own backstab.
Well, I have nothing to base my guesses on, but there must definitely be something you are doing wrong. Not having correct angle, not being close enough, if you are using shield, you can't be holding your shield up while you are trying to backstab, that will give you just basic r1.
